Green Beans with Lemon-Garlic Dressing
1 lb. green beans, trimmed
¼ cup fat-free mayonnaise
1 tsp. Dijon mustard
juice of 1 lemon
2 cloves garlic
pinch cayenne pepper
freshly ground black pepper
Immerse green beans in boiling salted
water briefly (approximately 3-4 minutes) until
they are crisp-tender, then drain and submerge in
ice water to stop the cooking process. Drain again.
Combine mayo, mustard, lemon juice, garlic, cayenne
pepper, and black pepper in a small food processor
or blender and puree. Toss beans with mayo mixture
and serve. Serves 4
** Note: Beans and mayo mixture can
be prepared (separately) in advance, and stored
in the refrigerator for 2-3 days.
