Garlic and Pepper Stir-Fry

1 TBS cooking oil
2 to 3 cloves garlic, minced
2 medium carrots, bias-sliced
½ medium red sweet pepper, cut into strips
½ medium green sweet pepper, cut into strips
½ medium yellow sweet pepper, cut into strips
1 small onion, sliced and separated into rings
1 c sliced fresh mushrooms

Preheat a wok or large skillet over high heat; add oil. Add garlic and stir-fry for 1 minute. Add carrots and stir-fry for 2 minutes. Add peppers and onion and stir-fry for 2 minutes. Add mushrooms and stir-fry about 2 minutes or more or until vegetables are crisp-tender. Serves 4
