Breakfast Fruit Wrap
1 tortilla, preferably whole wheat
2 tsp. "fruit only" strawberry preserves
2 TBS reduced fat ricotta cheese
1/3-1/2 fresh strawberries, sliced
2 TBS sliced almonds, toasted
Use a flat surface to spread preserves
on the tortilla; top with ricotta cheese. Carefully
add the sliced fruit; sprinkle sliced almonds. Starting
from one end, roll tightly. Wrap in foil for neater
eating.
Variation: Spread tortilla
with apricot preserves and use peaches, sliced fresh
or canned and well-drained.
