Chicken Haystacks

2 boneless skinless chicken breasts
1 sheet shredded phyllo pastry, room temperature
2 TBS feta cheese
1 TBS basil pesto sauce
2 TBS black olives, diced
1 tomato, finely chopped
10 fresh chopped basil leaves

Pat chicken dry, and season with salt and pepper. In bowl, mix feta cheese with pesto sauce. Make a cut horizontally in the chicken to create a pocket. Fill each with half of feta cheese mixture. Wrap each breast in phyllo dough, and bake at 350 degrees for 25 minutes. Serve with olives, tomato, and basil leaves.
