Basic Cookie Recipe
1 ¼ c almond flour
¾ c splenda
½ tsp. guar or xanthan gum
½ c butter, soft
1 egg
¾ tsp. baking powder
½ tsp. vanilla
1/8 tsp. salt
Mix all ingredients in mixer until blended.
Divide into 2 bowls and flavor according to your tastes.
Refrigerate at least 4 hours before baking. Make cookies
by forming dough into ½" balls, placing
on a cookie sheet. Dip bottom of a glass in splenda
(or splenda/cinnamon mixture) and flatten balls. Bake
at 375 degrees for 8-12 minutes, until lightly browned.
Makes almost 6 dozen.
