1 lb. baby carrots, scraped gently with a knife,
not peeled.
2 tsp. olive oil
salt to taste
Preheat oven to 450 degrees. Spread
the carrots out in a single layer on the baking sheet.
Brush them with olive oil and sprinkle with salt.
Roast the carrots on the top rack of the oven until
they are tender on the outside, about 10 minutes.
